In general breweries produce excess yeast in the amount of 2-4 % of the total production. This yeast contains a significant amount of beer that can be recovered and is more profitable the larger the brewery.
Cerveceria Polar decided to undertake this project of beer recovery from yeast and selected us to supply the technology and equipment for its four brewery plants.
Waste yeast is taken to an automatic blending module in order to add deareated water in a ratio that guarantees an optimal yeast separation in the BRUX-510 continuous centrifugal separator. Recovered beer is then returned to the process and the yeast is taken to an autolyzing module after which is used as a sub product.
